Anyone walking through the olive groves might think that everything is still. In reality, this is when nature works in silence. The olive trees grow slowly, absorbing the Sicilian sun day after day, preparing to become the fruit of the next harvest.
For us, too, this is a precious time.
Every morning we walk through the olive grove, observing the small changes that each day brings. We watch the trees, the soil and the fruit.
These are simple yet essential gestures, because the quality of our olive oil begins long before the olives
reach the mill.
Farming according to the principles of organic agriculture means respecting nature’s rhythms. We cannot speed up what takes time, but we can accompany every stage with care, experience and attention.
Autumn is still far away, yet waiting is part of our work. Every season prepares the next, and every olive holds the promise of a new extra virgin olive oil.
It is in this silence, between the Sicilian sun, the earth and the wind, that what will one day reach your table begins to take shape.
